Easter Baking Class at Lavonne


Long weekends always bring a cheer. And this Easter weekend, we decided to spend it learning to bake some festive treats. Lavonne, the popular patisserie and baking academy at Bangalore, is also known for their baking classes where one can learn to make a whole range of delights such as cupcakes, breads, tarts, pies, quiches, tea time cakes, chocolates, cake decorations, speciality cakes, and more. So last weekend we signed up for their Easter baking class with Pastry Chef and Owner, Vinesh Johny, and were all geared up to make Chocolate Easter Eggs, Olive and Blueberry Frangipane Tart, Hot Cross Buns, and Carrot Cake with cream cheese frosting.

The class began at 10 am and our batch included six participants: Namrata, a MBA student who was in town for a two-month internship; Nicole, from Netherlands who is living in Bangalore now; Marisha, a nine standard student who loves to bake and been doing so since six years of age; Veena, who recently quit her job and is now devoting her time to learn baking; and Vinay, a techie who loves to bake in his free time.

The first recipe we learned to make was Chocolate Easter Eggs. Chef Johny demonstrated the process and we then got hands down to doing it ourselves. We learned to make the eggs in the mould, fill it with gems and seal it, give a little texture to the surface, and finally decorate the eggs with edible paint or gold dust.



The second recipe was hot cross buns, and it took us quite a lot of strength to knead the dough to attain the required elasticity. We then loaded the loaves with raisins and spices, made the cross on top and placed it in the oven.


Up next was the tart which was surprisingly easy and we made sure that we stuffed it with blueberries and olives. The sweet and salty flavour added an interesting punch to the tart.


And finally, we learned to make carrot cake. The best part was decorating the cake with cream cheese frosting and marzipan carrots.



The classes are held during weekends and the prices start at INR 2000 onwards. The class duration is from 10 am to 4 pm. Make sure you book much in advance for the classes.
